Preheat oven to 350°F (175°C). Spray 9x13 inch baking dish with cooking spray.
Crush Doritos in zip-lock bag with rolling pin until chunky (not powder).
Mix filling - Combine chicken, soup, Rotel, sour cream, milk, taco seasoning, and 1.5 cups cheese in large bowl.
Layer casserole - Half Doritos in dish, half chicken mixture, repeat layers.
Top with cheese - Sprinkle remaining 1/2 cup cheese on top.
Bake covered with foil for 35 minutes until bubbling.
Rest 5-10 minutes before serving for best texture.
