Ingredients
  

  • 1 bag Nacho Cheese Doritos (10 oz) Crushed to 4 cups
  • 2 cups Cooked shredded chicken Rotisserie works great
  • 2 cups Shredded Mexican cheese blend Divided
  • 1 can Cream of chicken soup (10.75 oz)
  • 1 can Rotel diced tomatoes (10 oz) With green chiles
  • 1/2 cup Sour cream
  • 1/2 cup Whole milk
  • 1 packet Taco seasoning
  • Cooking spray For greasing dish

Equipment

  • 1 9x13 inch baking dish Or 2-quart casserole dish
  • 1 Large mixing bowl For combining ingredients
  • 1 Measuring cups For accurate portions
  • 1 Aluminum foil To cover while baking

Method
 

  1. Preheat oven to 350°F (175°C). Spray 9x13 inch baking dish with cooking spray.
  2. Crush Doritos in zip-lock bag with rolling pin until chunky (not powder).
  3. Mix filling - Combine chicken, soup, Rotel, sour cream, milk, taco seasoning, and 1.5 cups cheese in large bowl.
  4. Layer casserole - Half Doritos in dish, half chicken mixture, repeat layers.
  5. Top with cheese - Sprinkle remaining 1/2 cup cheese on top.
  6. Bake covered with foil for 35 minutes until bubbling.
  7. Rest 5-10 minutes before serving for best texture.

Notes

  • Can be assembled 24 hours ahead and refrigerated
  • Substitute ground beef or turkey for chicken if preferred
  • Add jalapeños or hot sauce for extra heat
  • Leftovers keep 3-4 days refrigerated
  • Can be frozen before baking for up to 3 months
