Ingredients
  

  • 2 cups all-purpose flour
  • 1 packet active dry yeast (2¼ tsp)
  • ½ cup warm water (110°F)
  • ¼ cup whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 large egg
  • 2 tablespoons melted butter
  • vegetable oil for frying
  • powdered sugar for dusting

Method
 

  1. Dissolve yeast in warm water with a pinch of sugar. Let sit 5-10 minutes until foamy.
  2. In large bowl, whisk flour, remaining sugar, and salt. Combine yeast mixture, milk, egg, and melted butter.
  3. Mix wet and dry ingredients until soft dough forms. Knead 5-8 minutes until smooth.
  4. Place in greased bowl, cover, rise 1-2 hours until doubled.
  5. Roll dough to ¼-inch thickness. Cut into 3-inch squares.
  6. Place on floured sheet, cover, rise 30-45 minutes until puffy.
  7. Heat oil to 350°F. Fry beignets 2-3 at a time, 1-2 minutes per side until golden.
  8. Drain on paper towels. Dust generously with powdered sugar while warm.

Notes

  • Maintain oil temperature at 350°F for best results
  • Serve immediately while warm
  • Store leftovers in airtight container up to 2 days
  • Don't overcrowd when frying to ensure even cooking
