- Wash fresh strawberries and remove hulls, or slightly thaw frozen berries if using frozen.
- Place strawberries, lemon juice, sugar, and vanilla extract in a blender or food processor. Blend until smooth.
- For a professional seedless texture, pour the mixture through a fine-mesh strainer using a spatula.
- For a thicker consistency (reduced strawberries), simmer the puree in a saucepan over medium-low heat for 10-15 minutes.
Notes
To keep the vibrant red color, always use fresh lemon juice. If using out-of-season strawberries, let them sit with sugar for 2 hours (maceration) before blending for a deeper flavor.
