Ingredients

  • 2 cups Strawberries Fresh or Frozen
  • 1 tablespoon Lemon Juice
  • 1-2 tablespoons Sugar Optional
  • 1/4 teaspoon Vanilla Extract

Equipment

  • 1 Blender or Food Processor To blend the berries into a smooth puree
  • 1 Fine-Mesh Strainer To remove seeds for a professional texture
  • 1 Small saucepan Use only if you want to make the reduction

Method

  1. Wash fresh strawberries and remove hulls, or slightly thaw frozen berries if using frozen.
  2. Place strawberries, lemon juice, sugar, and vanilla extract in a blender or food processor. Blend until smooth.
  3. For a professional seedless texture, pour the mixture through a fine-mesh strainer using a spatula.
  4. For a thicker consistency (reduced strawberries), simmer the puree in a saucepan over medium-low heat for 10-15 minutes.

Notes

To keep the vibrant red color, always use fresh lemon juice. If using out-of-season strawberries, let them sit with sugar for 2 hours (maceration) before blending for a deeper flavor.
