Salted Quinoa Granola Bars (Crunchy & Healthy)

These chewy, naturally sweetened granola bars feature a unique crunch from toasted quinoa. High in protein and perfect for meal prep!

Ingredients
  

  • 2 cups Medjool Dates Pitted and soaked
  • 1.5 cups Old-Fashioned Rolled Oats Gluten-free if needed
  • 0.5 cup Uncooked Quinoa Rinsed and dried
  • 1 cup Raw Almonds & Walnuts Roughly chopped
  • 0.5 cup Creamy Almond Butter Or peanut butter
  • 0.25 cup Raw Honey Or maple syrup for Vegan
  • 1 pinch Flaky Sea Salt For topping
  • 0.25 cup Dark Chocolate Chips Melted for drizzle

Method
 

  1. Prep Dates: Soak pitted dates in hot water for 10 mins, then blend into a thick paste.
  2. Mix Dry: In a large bowl, combine oats, uncooked quinoa, and chopped nuts.
  3. Combine: Fold in the date paste, almond butter, and honey until everything is well-coated.
  4. Press: Line an 8x8 pan with parchment. Press the mixture down very firmly using a heavy glass.
  5. Bake: Bake at 175°C (350°F) for 20 minutes until golden.
  6. Cool & Drizzle: Let cool completely. Drizzle with melted chocolate and sprinkle with sea salt. Chill for 30 mins before slicing.
