- %Make the Yogurt Cream
- In a bowl, mix Greek yogurt with honey and vanilla extract until smooth and creamy. Taste and adjust sweetness. The yogurt should be noticeably sweet to balance the coffee bitterness.
- %Prepare the Coffee
- Brew a strong cup of coffee or espresso and let it cool to room temperature. Pour into a shallow dish wide enough to dip cookies.
- %Layer the Tiramisu
- Dip each cookie quickly into the coffee for 1-2 seconds per side. Do not soak or they will fall apart.
- In a glass dish or individual cups, spread a thin layer of sweetened yogurt on the bottom.
- Add a layer of coffee-dipped cookies on top of the yogurt.
- Spread another layer of yogurt over the cookies.
- Add another layer of coffee-dipped cookies.
- Finish with a final thick layer of yogurt on top.
- %Dust and Chill
- Dust the top generously with cocoa powder through a small sieve. Cover and refrigerate for at least 2 hours, or overnight for best results. Serve cold with a final dusting of cocoa powder.

TIPS:
• Use full-fat Greek yogurt for the creamiest texture. Low-fat is too thin.
• Quick dip only — 1-2 seconds per side. Soggy cookies ruin the texture.
